Taste : Earthy, slightly bitter, with woody notes.
History : Used since ancient times, valerian was prized by the Greeks and Romans for its calming properties and to treat insomnia. In the Middle Ages, it was also used for its effects on nervous disorders and to soothe anxiety.
Instructions : Steep 1 to 2 teaspoons of dried valerian roots in 250 ml of hot water for 5 to 10 minutes, then strain.
